My Kitchen to Yours

Food, glorious food! I'm a foodie, therefore, I eat to live, and live to eat. I love trying new and different foods, visiting various restaurants, and we sometimes plan our vacations based on Andrew Zimmern's Bizarre Foods. (He's my favorite, & I've been a devoted fan since the beginning).

As a Stay-at-home mom, I gladly cook most of my family's meals, however, my husband enjoys cooking too, as he holds a degree in Hotel and Restaurant Management. He especially loves to grill.
Baked Avocado with a side of Refried Beans, topped with fresh, diced tomatoes, and queso fresco

My family gives me the freedom to cook whatever I'm inspired to cook, but everyone in our house is encouraged to give input on meal ideas. Most of our meals are meatless, as our youngest child is vegetarian, and we simply don't feel the need to consume meat every day. I'm serious about my family's health, so I cook only healthy meals. We eat meat about 3-4 times a month, but that varies depending on whether we're traveling or not.

Today, I'm sharing a few of the meals I cooked this week. I hope to make this a weekly feature, as I love sharing my recipes with others.

First up is one of our lunch-time favorites: Baked Avocado. This meal is healthy, and protein packed. Read here to learn some of the many health benefits of avocado. It can be modified several different ways, according to taste, and can be eaten for breakfast, lunch or dinner.
For this particular meal, here's what you'll need:

  • Medium to Large Avocado
  • 1 Tomato diced
  • Crumbled Queso Fresco
  • Veggie Bacon, or Turkey Bacon, or whatever you prefer

  1. Preheat toaster oven (I prefer toaster oven) to 350 degrees
  2. Cut avocado length-wise into two halves. Remove seed. Save and plant in your home garden.
  3. Place veggie bacon, or turkey bacon in the middle, and on top of the avocado halves.
  4. Place each avocado halve in toaster oven to bake for approximately 15 minutes, or until the outer edges are crisp, or if you've added bacon the bacon is crisp. (This step is also dependent on the size of the avocado as well. The bigger the avocado, the longer the cook time.)
  5. Remove avocado from toaster oven and sprinkle diced tomatoes and queso fresco on top of the avocado halves.

Again, there are several variations to this recipe. I've filled the center of my avocado with crab meat,  and I've seen it filled with egg. In that instance, the egg is cooked along with the avocado. Feel free ti use queso fresco, or shredded cheese, or no cheese. The recipe I've provided is my personal take on it, but feel free to be creative with yours and add whatever you like. If you like this, please share your recipe and your pictures with me here on my blog, or on my Facebook, or Instagram pages, and tag me to them!

The next recipe I'm sharing with you today is great for lunch, snack, or as small plates/hors d'oeuvres.   I love fresh food, and I absolutely love Mediterranean food! I'd say this dish is inspired Mediterranean. This is a simple and easy dish. I usually add carrots, but on this particular day, I didn't have any.

Fresh and delicious

Here's what you'll need:

  • Hummus, most any hummus will do. I like homemade hummus, and I also like Grandma's Hummus but use your favorite.
  • 1 bell pepper
  • 1 handful of grape tomatoes
  • 1 handful (pitted) Kalamata olives
  • Garlic Naan Tandoori Bread ( I prefer garlic, but use what you prefer)
  1. Cut the Garlic Naan Tandoori bread into triangular pieces.
  2. Place in toaster oven heated to about 250-300 degrees. I use low heat, so as not to burn the bread. I usually prepare the other food during this step, so I could easily burn the bread if the temp is too high. The key here is just to warm, or slightly toast the bread.
  3. Wash the bell pepper and tomatoes.
  4. Slice bell pepper
  5. Arrange hummus, Kalamata olives, tomatoes, and bell pepper slices onto plate
  6. Remove bread from toaster oven and add to plate.
Enjoy!

This will be a weekly feature, so be sure to check back. Please share, leave a comment, or tag me to pictures of these recipes once you try them. I'd love to see your take on them.

See you next week!

Love,

A Houstonian’s Style Guide: How to Beat the Summer Heat

Sweltering heat, glistening sweat, loose, damp hair that sticks to the back of the neck, shorty-shorts, top down (on the convertible car, of course) and tank tops may all look like the trappings of a BeyoncĂ© video, but for Houstonians, like myself, it’s the reality of summer’s maddening heat.

In an environment where temperatures regularly exceed 90 degrees, and humidity is thick enough to cut with a nail file, tastefully short shorts are wildly appropriate, as well as an occasional crop top. Cut-off shorts, if done right, are in constant rotation here in Houston.  Cut-offs, formally known as Daisy Dukes could be frowned upon in certain situations, however, if done right they are a great way to casually beat the Houston heat.  In the denim department, acceptable alternatives to super short cut-offs are “Midi” cut-offs, “Midi” fold-over shorts, boyfriend shorts, casually cute Bermuda shorts. Levi’s, Gap, Madewell, and Joes Jeans are my personal favorites in this category.

Dolphin shorts are all the rage this summer, and a fresh, breezy way to break the monotony of the typical summer ensemble, and simultaneously beat the heat. The airy nature of the season’s most notable trend make dolphin shorts the coolest asset in a Houston fashionista’s wardrobe.  The styling possibilities are endless, as this sunny-season staple can be dressed up or down. The chic-est of dolphin shorts are flirty and dainty and sometimes embellished with lace or ruffles. These can be worn most anywhere, and paired with heels or ornate flat sandals for a more bohemian feel. Top this look off with a loose, flowing top, or perhaps a fitted tank. Printed shorts are now trending, and a universal favorite. The good news? All of the knickers a la mode can be found stamped in the latest imprints.  Ankara, Aztec and floral printed shorts are all now trending.

Urban Outfitters, Free People, Off Saks Fifth Ave, and Forever 21 are my personal favorites in this category.

Fashion repeats itself, yet again with the re-emergence of rompers. Short rompers are a personal favorite, as they are no fuss and can be dressed up or down with ease. Once popular in the seventies and 80’s they are currently the most effortless alternative for any silhouette.  Cotton rompers are carefree and comfy, while polyester and silken rompers are a more voguish option. Textile preferences aside, short rompers are conducive in the battle against a Houston heat wave. Take note, rompers are vacation staples, as they are easy to pack and highly versatile!

American Apparel and Young Fabulous and Broke are my absolute favorites in this category.
Tye-Dye maxi dresses, printed mini dresses,  yoga pants, and cotton tees all make the honorable mention list for stylish appeal, noteworthy cooling comfort.

Trend Alert: Printed Yoga Pants (How to Achieve the Look)

Look good, to look good!
See http://www.polyvore.com/trend_alert/set?id=126323779&lid=3711636

Yoga pants have taken on a dramatic new look!  Abandoning their humdrum existence and transcending into pattern play, printed yoga pants are #nowtrending.

Today’s yoga pants have major crossover appeal, as they’re not just for the tree-posing yogi anymore. The figure-hugging, lightweight pants are versatile, and comfortable which makes them perfect for almost any casual outing. Word to the wise- the captivating mystique of these pants will allure, distract and delight everyone that looks your way!

How to Achieve the Look

The adaptability of printed yoga pants makes them the perfect garment for the fit, stylish multitasker with an overflowing to-do list. From Aerial Yoga, to the Farmer’s Market, pair them with a solid sports bra, and/or tank for a morning workout (Pilates, walking, barre, etc) or any other daily routine.

To create a more relaxed look, pair the leggings with a long, flowing tunic. This look is perfect for the airport, the mall, lunch or coffee run.
Add dimension, or modesty to this look by tying a sweatshirt shirt around the waist.

Where to Buy

Luckily, there’s no shortage of retailers offering the season’s most ornate pants. Nike, Athleta, and Nordstrom are a few of the more prominent merchants currently offering a wide variety for the insightful fashionista. However, in true budgeteer/frugalista fashion, I must say my favorite yoga pants are affordable yoga pants. Marshall's, Gap,  Forever 21, and Nordstrom Rack are at the top of my list for finding affordable workout wear. In fact, I found my most cherished pair of printed yoga pants at Marshall's for 16.99! The brand? Climawear. I checked their website, and the original price on my pants were close to $75!
Update: Climawear is currently running an awesome sale! Up to 60%! Don't miss out on your chance to treat yourself!

Lastly, always remember to do a self-check, or selfie in the mirror before purchasing as to avoid the sheer embarrassment of a wardrobe malfunction. Pun totally intended.
